Beef & Broccoli Stir Fry

Happy Monday to all! We had a wonderful weekend, we headed north to spend some time with my family! I haven’t been “Home” since Christmas so we headed up late on Thursday and spent a long weekend with my parents and siblings. I think I shared this in a post a while ago but I have 5 siblings, 2 of them are married and have children and I have 1 nephew and 4 nieces up there. It was also one of my younger sisters birthdays, she turned 21! So on Saturday the dads watched the kids and the girls went out to celebrate, it was so fun to get out! We didn’t stay out too late but morning comes early when you have 3 young kids. So now it is Monday and back to reality Smile. I truly love Mondays, the kids are back at school, the hubby is at work, and I am back to cooking, cleaning, and blogging! I love my job!

I love to share with you my favorite recipes, I love easy and fast recipes best. I do share some more complicated ones but I tend to stick with crockpot recipes and others that take very little time in the kitchen. With a houseful I really don’t have too much time to spend in the kitchen, my baby is very needy and doesn’t allow me much timeSmile.  So today I am going to share something new with you, it is one of my more time consuming recipes but it is by no means complicated or too time consuming, I would say it takes 20-30 minutes to prepare.

What you will need to make this is:

3/4 pound uncooked lean trimmed sirloin beef, thinly sliced against the grain

2 1/2 Tablespoons cornstarch, divided

1/4 teaspoon salt

2 teaspoons olive oil

1 cup of beef broth, divided

5 cups uncooked broccoli

1 Tablespoon ginger root, fresh, minced

2 teaspoons garlic, minced

1/4 teaspoon red pepper flakes, or to taste

1/4 cup soy sauce

1/2 cup water

Directions:

1) On a plate or in a bowl put 2 tablespoons of cornstarch and salt, add beef and toss to coat.

2) Heat oil in large non-stick wok or deep skillet over medium heat.

Add beef and stir-fry until lightly browned and cooked through, transfer to bowl with slotted spoon.

3) Add half a cup of broth in same pan, stir to loosen and bits of food left on bottom of the pan. Add broccoli and cook stirring occasionally until broccoli is almost crisp tender. Do not over cook! Uncover pan and add ginger, garlic, and red pepper flakes, stir-fry for about 1 minute.

4) In a cup stir together soy sauce, remaining 1/2 cup of broth, remaining 1/2 tablespoon of corn starch, and water until blended, stir into pan.

Reduce heat and simmer for a minute or two.

5) Return beef to pan and any juices in bowl, toss with other ingredients.

Serve over your favorite rice! Ours favorite is an organic long grain brown rice!

Day 18: Meatloaf Muffins and Homemade Mac & Cheese

Hi! Todays posting is late because I went on a field trip with my daughters 1st grade class. I love it when I can spend time with my kids at school!
Today I am going to do another awesome recipe, this is one of my very favorites! It is amazingly easy and it is fun to make.
My daughter does it all I just hand her the ingredients. So here is your ingredient list:
1lb of ground beef
1/3 cup seasoned bread crumbs
1/3 cup parmesan cheese
1 egg
1/4 cup ketchup
1/2 teaspoon garlic powder
salt and pepper
several shakes of Worcestershire sauce

Add bread crumbs and parmesan cheese to meat in medium size mixing bowl.
Then add egg, ketchup, garlic powder, salt, pepper, and worcestershire sauce.
Then the fun begins!
My daughter loves to help with this job! Mixing! By hand! It may sound gross but it is the best way to get it all mixed together.

Now instead of the regular old meat loaf, we are going to make them a little more fun and put them in muffin tins.
This way you have neat little portion sizes and the kids seem to like it better this way. Any way to get my kids to eat better and I am for it!
Make sure you spray your muffin tin with non stick cooking spray, then they just pop right out of the pan.

And here is your finished product. Just pop them in a 350* oven for 30-35 minutes and enjoy!

Today I want to throw in a little something extras too! I made this as a side dish to go with our meat loaf muffins. It is a super simple mac and cheese. Boil your noodles or use left overs, about a 1/2 pound. After cooked throw them into a microwave safe mixing bowl or dish along with 1/2 cup of milk, 2 cups of cheddar cheese, and some kosher salt and pepper to taste. Microwave for 3 minutes, take out and stir. Return to microwave for 2 minutes more stir and serve immediately!

Day 10: Bowtie Skillet Lasagna

I sure hope no one is getting sick of my recipes because we tried  another new one last night and it was AMAZING! I tend to be very critical of my cooking so for me to say it was amazing means it WAS really good! My children's favorite dinner is spaghetti, they could have it several times a week and be happy. I tend to get sick of it though, so I thought I would try something similar but a little different. It went over really well, my son said I am the best cook ever! I like getting compliments from the kids because they are very picky eaters, so if they liked it mommy has succeeded! So here is your ingredient list:
10 oz of Bowtie pasta
(I cooked a whole 12 oz box and kept some out for those who like plain noodles too)
1lb Ground Beef
2 Tablespoons Olive Oil
1 jar of Spaghetti Sauce
1/2 teaspoon Garlic Powder
1 teaspoon Italian Seasoning
1 cup Shredded Mozzarella Cheese
1/2 cup Sour Cream

Directions:
Boil pasta, drain.
Brown ground beef, drain grease.
Add cooked pasta to ground beef and add 2 Tablespoons of olive oil, stir.
Add spaghetti sauce, garlic powder, Italian seasoning, mozzarella cheese, and sour cream to beef and pasta, stir.
Turn heat to low and cook until heated through.
I realized as I was cooking dinner that I forgot to purchase the sour cream, my cook book said to substitute it with plain yogurt, well I didn’t have that either. So I did have some half and half left over from my loaded baked potato soup the other day so I added a little of that and it still tasted amazing! Here is what the finished product looked like!

Also I thought garlic bread would go great with this but I didn’t plan that ahead of time so I didn’t have any in the house, so I made my own. I had some leftover hamburger buns ( I also use just plain old bread if that’s all I have) and spread butter on them and sprinkled with garlic powder and baked. I broiled them for just a couple minutes, it doesn't take long if you broil them, watch them carefully so they don’t burn!
