Today I would like to share with you one of my very favorite crockpot recipes, and perfect for a lazy fall Sunday! It only takes about 15 minutes to prep and you have a delicious dinner ready to go. Here is the ingredient list:
6 large potatoes, peeled and cubed
1 large onion
1 quart chicken broth
3 garlic cloves, minced
1/4 cup butter
salt & pepper to taste
And for later, before serving:
1 cup cream or 1 cup half & half
1 cup cheddar cheese
Garnish with: chives, sour cream, bacon, & cheese
Directions:
*Combine first 7 ingredients in large crockpot and cook on high for 4 hours or low for 8 hours (potatoes should be tender)
*Then when cooking is complete, mash potatoes until coarsely chopped and soup is slightly thickened
*Stir in cream or half & half and cheese
*Garnish with toppings
Enjoy!!! Let me know how you like this recipe and follow me on Facebook @ From Nature to Nurture

ReplyDeleteWould Sour Cream work for the cream?
ReplyDeleteI don't see why not, it would be worth trying. I and up substituting things a lot just because I may not always have everything in the house that I need.
